Walk through the doors of a few historic Texas barbecue joints, and you’d swear you’d entered a museum. I’ve had that feeling at Smitty’s Market in Lockhart, Pat Gee’s in Tyler, and Martin’s Place in Bryan. You may have your own exhibit-ready restaurant in mind.
