The oyster shell in my hand was deep cupped, purple tinged, and petite, with beautiful ridges. The meat was surprisingly sweet. It looked and tasted nothing like the mammoth, creamy Gulf oysters I’m used to. Yet it was a Gulf oyster. I knew because I had just watched it being plucked from the waters of Keller Bay, an inlet of Matagorda Bay, while on a skiff piloted by oyster farmer Blake Whitney.Whitney owns Three Sisters Oyster Co., founded in 2024, just a handful of years after Texas became the last coastal state to legalize oyster farming.
