When PJ and Tara Head first opened Koop’s BBQ Kitchen in Galveston, in 2018, they tried to do too much. In addition to barbecue, they offered fried chicken, shrimp, and catfish; burgers; and po’boys. They soon realized barbecue needed to be their focus, though they were mostly using it as a filling for tacos, burritos, and sandwiches.
