When did people stop eating taco salads?The Tex-Mex dish seemed to be everywhere in the nineties. Not exactly the healthiest salad out there, it typically consisted of shredded iceberg lettuce; bland, out-of-season diced tomatoes; questionable chili-seasoned ground beef; and tons of shredded cheese. All this was contained in the iconic deep-fried flour tortilla shell. For all its flaws, I still adore the taco salad, which over the years was edged off menus by, you know, actual salads. And edged out of grocery stores, too, apparently. When I set out to write a recipe for this nostalgic back-to-school favorite of mine, I could not find premade taco-salad bowls at any store.
