A Pitmaster Expands on His Family’s Legacy at His New East Texas Barbecue Joint
When Josh Burke took an ownership stake in Smitty’s Smokehouse, in Jasper, in 2017, he wondered if I had ever shared my opinion on his family’s barbecue business. He didn’t find anything in Texas Monthly, so he looked at my old blog and found this snippet from my review of another restaurant in Jasper: “A fancy looking joint with fake Austin stone on the exterior proudly displayed stainless steel gasser pits on a busy corner. We passed it by.” I didn’t mention Smitty’s by name, but Burke knew what I was describing back in 2012.
