By now, the Austin food truck KG BBQ has a reputation bolstered by a Netflix special and a coveted spot on the Texas Monthly Top 50 BBQ list. But before that, Kareem El-Ghayesh was just a finance guy living in Cairo and dreaming of Texas brisket. He decided if he was going to be serious about becoming a pitmaster, he needed to commit.
