Rubi's TacosChicago in the summer is a Texan’s dream. Temperatures are mild, and the breeze off Lake Michigan sends waves of cool comfort across the city. It’s also a fantastic place to eat Mexican food. Mexican immigrants have called Chicago home since the early twentieth century, working as agricultural laborers, on the railroad, and in meatpacking houses. According to the census, Mexicans represent nearly 75 percent of the city’s Hispanic or Latino population. Many people in the Mexican community trace their heritage to the state of Michoacán, which explains the prevalence of carnitas purveyors.
