Glance into the pit room at the new Vaqueros Texas Bar-B-Q, in Allen, and you might think you’re looking at an art installation. From the sidewalk of the Watters Creek development, a pair of custom-painted, thousand-gallon smokers are visible behind the storefront windows. Backline Fabrication, in Austin, built the smokers and finished them with a striking Aztec-inspired paint job based on images owner and pitmaster Arnulfo “Trey” Sánchez had supplied. “I wanted to include Huehueteotl, the Aztec god of fire,” Sánchez told me.
